What is that sweet ingredient generally found in General Tso's chicken?
Q. I LOVE general tso's chicken and have tried cooking a few recipes but these recipes seem to have been missing something. I have eaten general tso's chicken at various places, and I enjoy it most when it has a sweet taste to it. I am not very familiar with chinese food and am really hoping someone can tell me what this sweet tasting ingredient might be. Thanks for any help!

Q. I went to the Old Country Buffet and found a roll bread that is absolutely divine. It is very fluffy and sweet, along with soft. It has melted butter directly on top. What is the name of this type of bread, and can you give me a recipe? (I feel silly for not knowing the name!) The bread itself is also slightly doughy and compacts together a little once touched. It looks similar to Challah, but I'm not sure that's it.

A. I wouldn't go for a picture on paper, if that's what you were thinking of doing. Paint it on some quality canvas. Don't go for simple phrases like I love you, IMO. Can't wait any longer!!! 1 lb boneless, skinless chicken tenders 1 can whole-berry cranberry sauce (1 c dry white wine, 2 T Dijon mustard, 2 T brown sugar) Saute chicken in small amount of oil in a large non-stick skillet on med-high, about 4 min on each side. Do not over cook. Remove to a platter and keep warm. Add wine to skillet on med-high and cook until reduced by half. Stir in cranberry sauce, mustard and sugar. Top chicken with heated sauce. Q. I have purchased sweet almond oil for my sensitive, dry skin. I then read the ingredients and it listed 100% pure expressed sweet almond oil, fragrance. I hope this doesn't cause any irritation.

How long can a sweet potato pie be out of the refrigerator?
Q. I'll be driving about 6 or 7 hours away for Thanksgiving but my inlaws really want me to bring my sweet potato pie. Will it still be good after being in the car for that long? A. I would get a cooler. Your pie will be able to last as if it were in the fridgerator that way. However if it is not an option to take a cooler, lay down a bunch of towels in your cars floor board, cover the pie with aluminum foil, place it in the center of the towels and place frozen water bottles around it. That should knock a few hours of "sit out" time for you. If that is not an option either, the pie will be fine, but keep it in the floor board covered where it will be exposed to the least heat and make sure to eat it that day. Some people keep pies out of the fridge for several days, and that is fine for them. But in my opinion It really shouldn't sit out more then 12 hours.

A. I would get a cooler. Your pie will be able to last as if it were in the fridgerator that way. However if it is not an option to take a cooler, lay down a bunch of towels in your cars floor board, cover the pie with aluminum foil, place it in the center of the towels and place frozen water bottles around it. That should knock a few hours of "sit out" time for you. If that is not an option either, the pie will be fine, but keep it in the floor board covered where it will be exposed to the least heat and make sure to eat it that day. Some people keep pies out of the fridge for several days, and that is fine for them. But in my opinion It really shouldn't sit out more then 12 hours.

What is the name of a red sweet dip served with poppadoms in Indian restaurants?
Q. The dip is a thick red sauce and it is very sweet, there aren't any onions etc mixed with it, it's just a plain thick red sweet dip. I have had this dip in a few Indian restaurants in London near where I live and want to know the name of it! Any help? Thank you.

A. Once again, tamarind sauce. It's very easy to make. Buy some tamarind seeds, it's usually vacuum packed like dates. Get the seedless if you can. Add an equal amount of palm sugar (jaggery) and a pinch of garam masala. Bring to a boil until the tamarind is soft. Puree and strain, done.

Q. I like making margaritas and caipirinhas. Often times though, the mix is too sweet. I have tasted good margaritas and caipirinhas at a good restaurant where they are not too sweet but not watery either. What is the trick?

What is the deal with people not knowing the difference between sweet potatoes and yams?
Q. I don't like yams. I absolutely love sweet potatoes. I can't figure out why people mix them up so much but I am starting to see that even big companies like Outback Steakhouse and baby food makers like Gerber are calling yams "sweet potatoes." Sweet potatoes are YELLOW on the inside and lighter in color on the outside than yams. They have an almost chewy firmness and they taste like a potato, only sweet. Yams are ORANGE and they are mushy and stringy when cooked. They actually have an almost squash-like flavor. They do not taste like a potato at all. So what is the deal? Who knows the difference between them and WHY is everyone so confused???

"In the United States, firm varieties of sweet potatoes were produced before soft varieties. When soft varieties were first grown commercially, there was a need to differentiate between the two. Can I substitute semi-sweet bakers chocolate for unsweetened?
Q. I want to make brownies but the recipe calls for unsweetened bakers chocolate squares and I only have semi-sweet (and can't get to the store), can I substitute these? Should I alter the recipe somehow if I do? Please be specific, I am an intermediate level cook. Thanks!!

A. you can substitute whatever kind you prefer, no need to alter recipe...I don't know why some recipes specify a certain chocolate because it doesn't matter, all it does is change the chocolaty taste so if dark 65% is too bitter for me (and it is) I use what I like and thats semi-sweet I have never had a problem
